Grilled Pork & Noodles
Bún Chả
Charcoal-grilled pork over vermicelli with a warm dipping broth. The smoke is the technique — the grill is not a detail, it is the dish.
The Method
Follow the sequence — the order is the technique.

Marinate the pork
Combine fish sauce, sugar, garlic and caramel sauce. Marinate the pork for at least an hour — the sugar in the marinade is what helps it char.

Grill over charcoal
Cook over real charcoal if at all possible. The fat drips, the edges char, and that smoke is the flavor you cannot fake on a stove.

Build the dipping broth
A warm, lightly sweet-sour broth in the bottom of the bowl — the grilled pork goes in, not on the side.

Assemble
Noodles, herbs and pickle on the side. Dip into the bowl of broth and pork as you eat.
Nga's Note
Without charcoal, bún chả is just pork and noodles. The grill is the recipe. If you must cook indoors, a ripping-hot cast iron gets you halfway.
