The Method
Follow the sequence — the order is the technique.

Dissolve the sugar
Stir sugar into warm water until fully dissolved — warm water, not hot, so you can taste as you go.

Add lime & fish sauce
Add lime first, then fish sauce. Taste. The goal is a conversation between sour, salty and sweet, not a winner.

Finish with aromatics
Stir in minced garlic and chili last. They should float, not sink — a sign the sauce is the right thickness.
Nga's Note
There is no single nước chấm. You make it for the dish in front of you — sweeter for chả, sharper for bún. Taste and adjust until it sings.
